Broiled Tomatoes On A Bed Of Spinach Recipe
- 4 x Tomatoes, sliced in half horizontally
- 1 c. Fresh bread crumbs
- 2 Tbsp. Freshly grated parmesan cheese
- 2 Tbsp. Extra virgin olive oil Salt and freshly grnd pepper
- 2 lb Spinach, trimmed, washed, and well-liquid removed
- 2 Tbsp. Extra virgin olive oil
- 2 x Cloves garlic, finely minced
- How to Prepare Tomatoes:Preheat the broiler.
- Place the tomatoes on a baking sheet, cut-side-up.
- Combine the bread crumbs and cheese and sprinkle over the tops, drizzle with extra virgin olive oil, and season with salt and pepper to taste.
- Broil the tomatoes till the crumbs turn golden.
- How to Prepare Spinach:Heat the oil in a large wok or possibly saute/fry pan till almost smoking.
- Add in the spinach and garlic, season with salt and pepper to taste, and saute/fry for two min or possibly till just wilted.
- Place on a large platter and top with tomatoes.
