Chocolate Angel Cakes
- 30 g cocoa powder
- 185 g caster sugar
- 12 cup glace cherries
- 6 egg whites
- 125 g plain flour
- 1 cup icing sugar
- Preheat your oven to 180 degrees celsius.
- Sift the flour and 30g of cocoa into a bowl.
- Place 6 egg whites in the bowl of an electric mixer and beat until soft peaks form.
- Add 2 tablespoons from 185g of castor sugar and continue beating until the egg whites are quite stiff.
- Fold in remaining castor sugar,flour and cocoa powder.
- Grease a muffin tray well with butter,and fill 2/3 full with the mixture.
- Bake for 20-25 min .
- Cool slightly and carefully turn out onto a wire rack to cool.
- Place icing sugarb in a bowl and add some warm water,a tablespoon at a time,until you have a soft icing.
- Drizzle the tops of the cakes with the icing,allowing it to drip on the sides.
- Quarter 1/2 cup worth of cherries and use to decorate the cakes.
