Smokey Beef Short Ribs

  1. Mix rub ingredients and set aside.
  2. Pat the ribs as dry as possible and season very generously with the rub (on all sides).
  3. Cover with plastic wrap and refrigerate for 24 hours.
  4. Set up your grill for Indirect Heat with a drip pan in the middle (add water).
  5. Place on the grill directly over the drip pan.
  6. Add wet chips directly to the hot charcoal and smoke at 325AF for about 30 minutes.
  7. Add more wet hickory wood chips and continue cooking at 300AF to 325AF for about an hour and a half to two hours.
  8. Remove from the grill and cool for 15 minutes before serving.
