Apple Chile Salsa
- 2 sweet-tart apples, peeled, cored and diced into small cubes, about 2 cups
- 14 cup red bell pepper, finely diced
- 1 grated lemon, zest of
- 2 tablespoons fresh lemon juice
- 2 tablespoons citron tea (see note)
- 3 green onions, white and green parts, finely chopped
- 12 serrano chili, seeded and minced, plus more to taste
- 14 cup chopped fresh cilantro
- 14 teaspoon salt, plus more to taste
- fresh ground black pepper
- In a medium bowl, toss together the apple, bell pepper, lemon zest, lemon juice, tea, onions, chile, cilantro, salt and black pepper.
- Taste for seasoning and adjust with more chile, salt or black pepper.
- Let sit at room temperature for at least 30 minutes.
- Make ahead: The salsa can be kept, covered and refrigerated for up to 4 hours.
- Allow it to come to room temperature before serving.
