Cornbread Topped Beef Casserole
- 6 slices OSCAR MAYER Bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 2 lb. lean ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1 onion, chopped
- 1 red pepper, chopped
- 1 can (15 oz.) tomato sauce
- 1/3 cup chopped green olives
- 1/4 cup raisins
- 1 pkg. (8.5 oz.) corn muffin mix, prepared as directed on package
- 1 cup KRAFT Shredded Sharp Cheddar Cheese
- 3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Preheat oven to 350 degrees F. Cook bacon in large skillet until crispy, about 5 min.
- ; drain.
- Set bacon aside.
- Add ground beef, onions and peppers to skillet; cook 5 min.
- or until ground beef is browned, stirring constantly.
- Stir in tomato sauce; cook 3 min.
- or until heated through.
- Remove from heat; stir in olives, raisins and reserved bacon.
- Spoon mixture into 13x9-inch baking dish.
- Combine prepared corn muffin batter and cheese in medium bowl.
- Spoon evenly over meat mixture.
- Bake 20 min.
- or until corn muffin topping is completely baked and golden brown.
- Cool slightly before serving.
- Top each serving with sour cream.
