Burnt-Pineapple Salsa
- 1 pineapple, peeled and cut into 1/2-inch-thick rounds
- 1 small red onion, minced
- 1 large jalapeno, minced
- 1 garlic clove, minced
- 1/4 cup chopped cilantro
- 3 tablespoons fresh lime juice
- Kosher salt
- Pepper
- Tortilla chips, for serving
- In a large cast-iron skillet, working in batches, lightly char the pineapple over moderately high heat, about 5 minutes per side.
- Let cool, then chop and transfer to a bowl.
- Add the onion, jalapeno, garlic, cilantro and lime juice.
- Season with salt and pepper and serve with tortilla chips.
