Burnt-Pineapple Salsa

  1. In a large cast-iron skillet, working in batches, lightly char the pineapple over moderately high heat, about 5 minutes per side.
  2. Let cool, then chop and transfer to a bowl.
  3. Add the onion, jalapeno, garlic, cilantro and lime juice.
  4. Season with salt and pepper and serve with tortilla chips.
