Spiced Quinoa Apple Pie Parfait

  1. Preheat oven to 375F.
  2. Combine chopped apple, brown sugar, 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon salt in an oven safe dish.
  3. Roast apples until soft and caramelized, about 15-20 minutes.
  4. Combine dry quinoa with remaining cinnamon, nutmeg and salt.
  5. Cook according to the quinoa package directions.
  6. When apples and quinoa have cooled (not completely, but they shouldnt be scalding) layer them in a glass with Greek yogurt.
  7. If desired, mix yogurt with cinnamon and honey for topping.
