Winter Soup
- 2 cups dried navy beans
- 1 large potato
- 4 stalks celery, chopped
- 1 onion, chopped
- 1 tablespoon soy sauce
- 23 cracked bulgur wheat or 23 barley
- 2 tablespoons hickory liquid smoke
- 18 teaspoon garlic powder
- 1 teaspoon onion salt
- 1 teaspoon seasoning salt
- 3 carrots, diced
- 14 teaspoon parsley
- Soak beans overnight.
- Rinse beans under cold running water.
- Put in crock pot; add water to cover.
- Turn pot to high.
- Chop vegetables while sauteing onion in margarine; add to beans.
- Add hickory flavoring, seasonings and soy sauce.
- Cook on high for 3 1/2 to 4 hours, stirring occasionally to prevent sticking.
- Add bulgar or barley and cook an additonal 2 hours.
- You may need to add some water.
- Serve hot with corn bread or biscuits.
