Biscotti (Italian Bread) Recipe

  1. Cream butter and sugar thoroughly.
  2. Add in Large eggs, one at a time and beat well.
  3. Sift flour, measure, sift again with baking pwdr and salt.
  4. Add in to creamed mix.
  5. Stir in flavoring and nuts.
  6. Turn mix onto lightly floured board.
  7. Knead till smooth.
  8. Divide dough in half.
  9. Form 2 rolls the length of a cookie sheet and 1 1/2 inch in diameter.
  10. Bake in a moderate oven (350 degrees) for 30 min or possibly till rolls are hard to the touch.
  11. While still warm, cut rolls crosswise into slices 3/4 inch thick.
  12. Lay cut side down on cookie sheet.
  13. Return to oven, bake 10 min longer to toast and dry out.
