Biscotti (Italian Bread) Recipe
- 1/2 c. butter
- 1 c. sugar
- 3 Large eggs
- 3 c. flour
- 3 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 teaspoon anise flavoring
- 1 c. coarsely minced almonds
- Cream butter and sugar thoroughly.
- Add in Large eggs, one at a time and beat well.
- Sift flour, measure, sift again with baking pwdr and salt.
- Add in to creamed mix.
- Stir in flavoring and nuts.
- Turn mix onto lightly floured board.
- Knead till smooth.
- Divide dough in half.
- Form 2 rolls the length of a cookie sheet and 1 1/2 inch in diameter.
- Bake in a moderate oven (350 degrees) for 30 min or possibly till rolls are hard to the touch.
- While still warm, cut rolls crosswise into slices 3/4 inch thick.
- Lay cut side down on cookie sheet.
- Return to oven, bake 10 min longer to toast and dry out.
