Curried Ginger Chicken Recipe
- 1 minced onion
- 1/2 stick butter (1/4 c.)
- 1/3 c. honey
- 1 teaspoon salt
- 1 teaspoon curry pwdr
- 1/4 c. Dijon mustard
- 2-3 tbsp. minced fresh ginger
- 4 whole chicken breasts, skinned & boned
- 1/2 c. toasted almonds
- Cut chicken breast in half to make 8.
- Cut each half lengthwise and again in half, widthwise.
- Place in buttered, shallow pan.
- Brown onion in butter, add in honey, salt, curry, mustard, ginger.
- Brush on chicken.
- Preheat oven to 350 degrees.
- Bake, covered 30 min and uncovered 30 min.
- Sprinkle with almonds.
- Serve over rice.
- Serves 8.
