Enchiladas, ground beef (or chicken)
- 1 1/2 lb ground beef (or chicken)
- 1/4 lb chorizo
- 6 each tortillas,preferably corn
- 1 each onion
- 1/2 cup salsa
- 2 tbsp tomato paste
- 6 peppers, small red, yellow, or orange
- 2 tsp minced garlic
- 2 cup cheddar cheese, grated
- 1/2 cup greek yogurt (i.e. sour cream)
- 1 1/2 cup rice (optional)
- 1 pinch spices
- cook beef, chorizo and onion together.
- drain
- add garlic, tomato paste, salsa, seasonings.
- let simmer
- Meanwhile, make wild rice.
- Assemble: pour enchilada sauce in bottom of 12X9 " baking dish.
- Assemble: Onto each tortilla add grated cheddar cheese, beef mixture and rice.
- Fold with seam side down.
- Assemble: Pour remaining enchilada sauce on tortillas, sprinkle with grated cheese.
- Bake at 350 to 375F until hot and bubbly.
