Atsuage au Gratin with Soy Milk, Miso and Mayonnaise

  1. Finely chop the Japanese leek.
  2. Mix the flour and soy milk together.
  3. Once well mixed, add the miso, mayonnaise, and chopped leek.
  4. Chop the atsuage into easy-to-eat pieces, and line them up in a casserole dish.
  5. Pour the sauce from Step 2 over the atsuage and then top with cheese.
  6. Bake in the oven until the cheese has browned and it's done.
