Westport Seafood Fettucini
- 12 ounce cooking oil
- 1 large pinch garlic
- 1 12 ounces mushrooms, sliced
- 3 ounces white fish, cubed
- 1 ounce baby prawns
- 2 ounces scallops
- 1 ounce shrimp
- 1 ounce crabmeat
- 2 ounces fettuccine, cooked
- 34 ounce green onion, chopped
- 13 cup sour cream
- 14 cup half-and-half
- 1 12 ounces parmesan cheese, grated
- seasoning salt
- sweet basil, large pinch
- Heat oil in saute pan and add garlic, mushrooms, and fish; saute 1 minute.
- Add baby prawns and scallops; saute 1-2 minutes more.
- Add shrimp, crab meat, fettucini, green onions, sour cream and half and half, saute until heated through.
- Finish off with the parmesan cheese, and add seasonings.
- Serve in a large heated boat dish, sprinkling top with fresh, chopped parsley, if desired.
