Slow-Roasted Potato Salad with Bacon
- 2 pounds new potatoes, halved King Sooper's 5 lb For $1.88 thru 02/09
- 4 strips bacon, cut in 1/4-inch strips
- 1/4 teaspoon sea salt, plus more for finishing
- 1-1/2 tablespoons olive oil
- 1/2 cup sour cream
- 1 tablespoon apple cider vinegar
- 1-1/2 tablespoons coarse mustard
- 4 scallions, sliced, reserve some to finish on top

- Step 1: Preheat grill on high.
- Step 2: Lay three pieces of Reynolds Wrap Aluminum Foil on top of one another.
- Add the potatoes, 1/4 teaspoon salt, olive oil and bacon.
- Step 3: Make a packet and seal tightly.
- Grill for 45 minutes to 1 hour, flipping the packet every 15 minutes.
- Grill until the potatoes are tender and the bacon and potatoes are browned in parts.
- Step 4: Let the potatoes cool for 10 minutes before adding them to a large bowl.
- Add the sour cream, cider vinegar, coarse mustard, and scallions and toss to combine.
- Season with salt and pepper.
- Step 5: Place the potato salad in a serving bowl, then garnish with reserved scallions.
- Serve.
