Slow-Roasted Potato Salad with Bacon

  1. Step 1: Preheat grill on high.
  2. Step 2: Lay three pieces of Reynolds Wrap Aluminum Foil on top of one another.
  3. Add the potatoes, 1/4 teaspoon salt, olive oil and bacon.
  4. Step 3: Make a packet and seal tightly.
  5. Grill for 45 minutes to 1 hour, flipping the packet every 15 minutes.
  6. Grill until the potatoes are tender and the bacon and potatoes are browned in parts.
  7. Step 4: Let the potatoes cool for 10 minutes before adding them to a large bowl.
  8. Add the sour cream, cider vinegar, coarse mustard, and scallions and toss to combine.
  9. Season with salt and pepper.
  10. Step 5: Place the potato salad in a serving bowl, then garnish with reserved scallions.
  11. Serve.
