Balsamic Bistro Meatballs

  1. Heat oven to 400 degrees F.
  2. Mix meat, yellow onions, bread crumbs, egg and 1/4 cup dressing just until blended; shape into 8 (3-inch) meatballs.
  3. Place on foil-covered rimmed baking sheet.
  4. Bake 26 to 28 min.
  5. or until done (160 degrees F).
  6. Meanwhile, heat 1 Tbsp.
  7. dressing in large skillet on medium heat.
  8. Add peppers and red onions; cook 5 to 10 min.
  9. or until onions begin to caramelize and peppers are tender, stirring occasionally.
  10. Place meatballs on bottom halves of buns; top with vegetable mixture and remaining dressing.
  11. Cover with tops of buns.
