Parmesan Dijon Roasted Chicken Breasts
- 1 tablespoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- 1 teaspoon chopped fresh oregano (or 1/4 t. dried)
- 1/2 cup chopped fresh parsley
- 4 (6 ounce) boneless skinless chicken breast halves
- salt
- fresh ground black pepper
- 2/3 cup freshly grated parmesan cheese
- Preheat the oven to 425 degrees.
- In a small bowl, combine the mustard, oil, oregano, and parsley.
- Season the chicken with salt and pepper and then brush all over with the mustard mixture.
- Place the chicken breasts upside down on a rimmed baking sheet.
- Sprinkle evenly with half of the Parmesan.
- Turn the chicken over and coat with the remaining cheese, pressing lightly to adhere.
- Bake for 20 minutes, or until golden and cooked through.
- Remove from the oven and let cool for 5 minutes before serving.
