Gram Kemp'S Chop Suey
- 2 1/2 lb. lean meat
- 3 c. diced onion
- 3 c. diced celery
- 1 can bean sprouts
- 2 Tbsp. oil
- 3 Tbsp. butter
- 1 Tbsp. salt
- 1 Tbsp. Chinese sauce
- 2 Tbsp. Chinese sauce
- 2 Tbsp. Chinese molasses
- 3 Tbsp. cornstarch
- Have meat 1/8-inch thick, cut in 1/4 x 1-inch pieces.
- Put in hot oil and simmer slowly until nearly tender.
- Drain liquid from sprouts and mix with cornstarch, molasses and sauce.
- Add to meat to cook 15 minutes longer.
- Saute onions in 1/2 of the butter until glassy; saute celery in remaining butter until nearly tender.
- Add this to meat.
- Cook 5 minutes.
- Add sprouts and cook 3 minutes longer.
- If Chinese chestnuts are available, slice thinly and add to the sauce.
