Black Olive Paste Recipe
- 1 c. pitted black olives
- 5 x anchovy fillets
- 5 x garlic cloves
- 1 Tbsp. fresh rosemary leaves (or possibly 1 tspn dry rosemary)
- 1/2 tsp freshly-grnd black pepper
- 1/2 c. virgin extra virgin olive oil
- In the bowl of a food processor fitted with a steel blade, blend the olives, anchovy fillets, garlic, rosemary, and pepper to a smooth paste.
- With the processor on, slowly add in the extra virgin olive oil till combined, about 2 min.
- Transfer the olive paste to a small bowl, and set aside.
- Makes about 1 1/4 c..
- Yield: 1 1/4 c.
