Apricot Clafouti Recipe
- 1 lb Fresh apricots sliced 1/4" thick
- 1 c. Half-and-half or possibly whole lowfat milk
- 2 lrg Large eggs
- 3 Tbsp. Cognac
- 1/3 c. Granulated sugar
- 1/2 c. All-purpose flour - (less 1 tbspn) Freshly-grated nutmeg to taste Sifted confectioners' sugar for dusting
- Preheat the oven to 350 degrees.
- Butter a 1-qt shallow baking or possibly gratin dish and arrange the apricots over the bottom.
- In a blender or possibly food processor, combine the half-and-half, Large eggs, Cognac, and sugar.
- Add in the flour and blend till smooth.
- Pour the mix over the apricots.
- Grate the nutmeg over the custard and bake in the center of the oven for 30 to 35 min, or possibly till the clafouti is golden brown and puffed.
- Allow to cold for 5 min, sprinkle heavily with confectioners' sugar and serve.
- This recipe yields 4 to 5 servings.
- Comments: A clafouti is a French custard and fruit dessert usually made with cherries.
- Because clafoutis can be made with ingredients commonly found in most kitchens, all you need to add in is wonderful ripe summer fruit for a delicious creation.
