Archangel Cake Recipe
- 1 c. butter
- 2 c. sifted flour
- 1 c. white pulverized sugar
- 1 tsp baking pwdr
- 8 x egg whites
- 1 tsp lemon extract
- 1/4 tsp salt
- Beat the whites of the Large eggs to a stiff froth.
- Add in the baking pwdr to the flour and sift it three times.
- Sift the sugar three times.
- Beat the butter, that has been well washed, to a cream with sugar.
- Then gradually add in the flour, beating all the while, and the flavouring extract.
- Lastly, add in the whites that must be very stiff.
- Mix all thoroughly, and bake for about half an hour in a moderately quick oven.
- Use a Turk's head tin.
