Matcha and Sweetened Black Bean Muffins

  1. Put butter into a bowl.
  2. Cover with plastic wrap and microwave to melt.
  3. Add vegetable oil and mix well.
  4. Also add the egg and mix.
  5. Add sugar and whisk well.
  6. Then add the milk and continue to mix.
  7. Combine cake flour and matcha and sift.
  8. Add a third into the bowl and mix well.
  9. Using a rubber spatula, add the rest of the powdered ingredients into the bowl and mix lightly.
  10. Add the black beans before everything is nice and smooth.
  11. Mix lightly.
  12. Line a muffin pan with parchment paper.
  13. Fill about 70-80% of each mold with the batter.
  14. Bake in a 180C preheated oven for 18-20 minutes.
  15. When they're done, test with a skewer and make sure it comes out clean.
  16. Done!
  17. Cool on a rack before serving.
