Cinnamon Swirl Bread

  1. Preheat oven to 350 degrees F. In a large mixing bowl, beat together Earth Balance, 1 cup sugar, and flax egg.
  2. Combine the flour, baking powder, baking soda, and salt.
  3. Add the flour mixture to the flax egg mixture alternately with the curdled soymilk.
  4. In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
  5. Pour a third of the batter into a greased 9X5 inch loaf pan.
  6. Sprinkle a third of the cinnamon sugar on top of batter.
  7. Repeat layers twice.
  8. Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.
  9. Cool in pan for 10 minutes.
  10. Remove from pan to a wire rack to cool completely.
  11. Variations:.
  12. For a healthier version: Use whole wheat pastry flour instead of all-purpose.
  13. Reduce the sugar of the dough to 1/2 -2/3 cup.
  14. Use half Earth Balance and half apple sauce.
