Cauliflower and Scallion Pancakes
- 2 eggs
- 2 cups grated cauliflower
- 6 green onions, finely chopped
- 1/3 cup Kraft 100% Parmesan Aged Grated Cheese
- 2 Tbsp. oil, divided
- 3 Tbsp. Miracle Whip Original Spread
- 1 Tbsp. Sriracha sauce (hot chili sauce)
- Mix first 4 ingredients until blended.
- Heat 1 Tbsp.
- oil in large skillet on medium-high heat.
- Spoon cauliflower mixture into 6 mounds in skillet, using about 2 Tbsp.
- cauliflower mixture for each; flatten each into 2-inch pancake with back of spatula.
- Cook 3 min.
- on each side or until lightly browned on both sides.
- Remove from skillet; cover to keep warm.
- Repeat with remaining oil and cauliflower mixture.
- Mix Miracle Whip and Sriracha sauce until blended.
- Serve with pancakes.
