Mrsp's Hearty Gluten Free Biscuits
- 1 14 cups gluten-free baking mix (*6/2/1)
- 14 cup teff flour, use 1/4 cup
- 14 cup quinoa flour
- 1 teaspoon guar gum
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 tablespoons flax seed meal
- 6 tablespoons shortening
- 1 cup buttermilk
- Preheat oven to 425 degrees.
- In a mixing bowl, combine all of the dry ingredients and whisk to mix.
- Mix the shortening until the mixture resembles crumbs.
- Add the liquid and gently mix until the dough forms a ball.
- Turn out onto a floured surface (sweet rice flour) and pat to
- 1" thickness.
- Cut the dough into 2 1/2 inch squares or use a biscuit cutter.
- Place lightly touching each biscuit on an ungreased baking pan (or pizza stone) Bake for about 20 minutes.
- CHeck to make sure that the biscuit dough is done before removing from the oven.
- Makes about 8 large biscuits
- * Here is the gluten free flour mix that I use

- 6 cups Sweet Rice flour
- 2 cups Potato starch
- 1 cup Tapioca starch.
- **I have found if I sub 1 cup of yogurt, it makes a very light biscuit.
