Apple Glazed Ham Loaf Recipe
- 1 jar , (10 ounce.) apple jelly
- 1/4 c. Firmly packed brown sugar
- 3 Tbsp. Lemon juice
- 1/2 tsp Dry mustard
- 2 x Large eggs
- 3 c. Kellogg's Corn Flakes cereal, crushed to 3/4 c.
- 1/4 c. Firmly packed brown sugar
- 3/4 c. Skim lowfat milk
- 1/3 c. Finely minced onion
- 1/8 tsp Pepper
- 1 1/2 tsp Dry mustard
- 1 lb Grnd cooked ham
- 1 lb Grnd pork Vegetable cooking spray
- Though it comes from The Kellogg Kitchens, this delicious loaf could just as well come from my mother's recipe file.
- She's made ham loaf for the family for years (mustard-, not apple-glazed), and her regular beef loaf always includes corn flakes, so this recipe seems merely an extension, a natural kitchen hybrid, one which automatically
- (to me, at least, and I'll wager to many others) tastes pretty much like home cooking is supposed to taste.
- Preheat oven to 350 degrees.
- For glaze, stir together first four ingredients in small saucepan.
- Cook over low heat, stirring frequently, till jelly melts.
- Bring to a boil.
- Boil one minute, stirring constantly.
- Remove from heat.
- Cold to room temperature.
- In a large mixing bowl, beat Large eggs slightly.
- Add in crushed cereal, the 1/4 c. brown sugar, lowfat milk, onion, pepper, and the 1 1/2 teaspoon dry mustard.
- Beat well.
- Add in him and pork.
- Mix till combined.
- Shape into loaf.
- Place in pan coated with cooking spray or possibly foil-lined pan.
- Bake about 1 hour and 15 minutes.

- Brush loaf with glaze several times during last 30 minutes.

- Serve with remaining glaze.
- YIELD: 1 loaf, 12 slices
