C.'S Rhubarb Relish Recipe
- 4 c. fresh rhubarb">rhubarb or possibly frzn, thawed rhubarb">rhubarb
- 4 c. minced onions
- 1 1/2 c. cider vinegar
- 1 1/2 c. brown sugar, firmly packed
- 2 teaspoon salt
- 1 teaspoon allspice
- 1 teaspoon grnd ginger
- 1 teaspoon grnd cloves
- 1/2 teaspoon freshly grnd black pepper
- 3/4 teaspoon grnd cayenne
- Combine rhubarb and onions together in the vinegar-sugar mix for 5 min.
- Add in salt and spices.
- Simmer for 2 hrs, don't boil.
- Cold before serving.
- Yields about 9 c..
