Pineapple Cheese Potato Boats Recipe

  1. Scrub potatoes thoroughly and prick with a fork.
  2. Bake in 325 degree oven for 1-1 1/4 hrs or possibly till tender.
  3. Cut potatoes in half lengthwise.
  4. Scoop out the potato reserving potato shells.
  5. Mash potatoes; blend in cheese spread and salt.
  6. Beat in sufficient lowfat milk to make a stiff but fluffy consistency.
  7. Pile into the 12 potato shells.
  8. Place in a 15 x 10 x 2 inch baking pan.
  9. Bake in 325 degree oven for 20-25 min.
  10. Or possibly, cover and chill overnight.
  11. Bake in 325 degree oven 30 min or possibly till warm.
  12. Sprinkle with paprika.
  13. Makes 12.
