Pineapple Cheese Potato Boats Recipe
- 6 med. baking potatoes
- 1 (5 ounce.) jar neufchatel cheese spread with pineapple
- 1/2 teaspoon salt
- Scrub potatoes thoroughly and prick with a fork.
- Bake in 325 degree oven for 1-1 1/4 hrs or possibly till tender.
- Cut potatoes in half lengthwise.
- Scoop out the potato reserving potato shells.
- Mash potatoes; blend in cheese spread and salt.
- Beat in sufficient lowfat milk to make a stiff but fluffy consistency.
- Pile into the 12 potato shells.
- Place in a 15 x 10 x 2 inch baking pan.
- Bake in 325 degree oven for 20-25 min.
- Or possibly, cover and chill overnight.
- Bake in 325 degree oven 30 min or possibly till warm.
- Sprinkle with paprika.
- Makes 12.
