Hollandaise with Red and Green Peppers
- 1 green pepper
- 1 red pepper
- 2 tbsp. double cream
- 4 egg yolks
- Salt
- Pepper
- 8 oz. butter
- Wrap the peppers in wet paper towels and microwave at HIGH for 10 minutes.
- Put in cold water; take out and cut into quarters and peel of skin.
- Puree each peppers with 1 tablespoon cream; then mix into each one 2 egg yolks, salt and pepper with wire wisk.
- Put butter into glass bowl and microwave at high for 1-1/2 minutes.
- Mix the pepper mixes, each with half of the butter real well.
