Delicious Easy Peazy Sponge Cake
- 6 medium eggs
- 10 ounces caster sugar
- 12 ounces butter
- 12 ounces self raising flour
- 1 ounce ground almonds
- Pre heat oven to gas mark 4 or as you would to bake a cake.
- Using an electric hand mixer, whisk the butter till you get a nice soft creamy white colour.Add sugar and mix till nice and fluffy.Add eggs two at a time and beat well after each addition.
- Finally sift in self raising flour and almond powder and beat well till well incorporated.
- You will now get a nice thick smooth batter but do not worry.
- Using a spatula place all the cake batter into a lined 10" cake tin and smooth evenly.
- Bake in oven for about 45 minutes or till soft and springy.
