Delicious Easy Peazy Sponge Cake

  1. Pre heat oven to gas mark 4 or as you would to bake a cake.
  2. Using an electric hand mixer, whisk the butter till you get a nice soft creamy white colour.Add sugar and mix till nice and fluffy.Add eggs two at a time and beat well after each addition.
  3. Finally sift in self raising flour and almond powder and beat well till well incorporated.
  4. You will now get a nice thick smooth batter but do not worry.
  5. Using a spatula place all the cake batter into a lined 10" cake tin and smooth evenly.
  6. Bake in oven for about 45 minutes or till soft and springy.
