Danish Potato Salad

  1. Combine vinegar, water, sugar, salt, pepper and mustard in medium saucepan.
  2. Bring to a boil.
  3. Reduce heat; gradually beat in well-beaten eggs.
  4. Cook over medium heat, stirring constantly, until thickened, for about 5 minutes.
  5. Beat in salad dressing. Toss together potatoes, hard-cooked eggs, cucumber, onion and green pepper.
  6. Pour on dressing; toss gently.
  7. Adjust seasoning if necessary.
  8. Makes 6 servings.
