Danish Potato Salad
- 1/4 c. vinegar
- 1/4 c. water
- 1/4 c. sugar
- 1/4 tsp. salt
- 1/16 tsp. pepper
- 1 tsp. prepared mustard
- 2 eggs, well beaten
- 1 c. salad dressing
- 4 c. cooked potatoes (about 2 lb.), cubed
- 2 hard-cooked eggs, chopped
- 1/2 c. chopped cucumber
- 1 Tbsp. minced onion
- 1 Tbsp. chopped green pepper
- Combine vinegar, water, sugar, salt, pepper and mustard in medium saucepan.
- Bring to a boil.
- Reduce heat; gradually beat in well-beaten eggs.
- Cook over medium heat, stirring constantly, until thickened, for about 5 minutes.
- Beat in salad dressing. Toss together potatoes, hard-cooked eggs, cucumber, onion and green pepper.
- Pour on dressing; toss gently.
- Adjust seasoning if necessary.
- Makes 6 servings.
