Chicken Panzanella Salad
- 1 whole Sweet Pepper
- 1 whole Cucumber
- 1 whole Avocado
- 1 pint Cherry Tomatoes
- 1 whole Rotisserie Chicken
- 2 cups Marie Callender's Fat Free Herb Seasoned Croutons
- 10 leaves Fresh Basil
- 8 leaves Fresh Mint
- Your Favorite Dressing, To Taste
- Cube up the pepper, cucumber, avocado, and tomatoes, and throw them in a bowl.
- Pull the breast meat off of the chicken, shred or chop it, then add it to the veggie mix.
- Chiffonade the basil and mint, put the in the bowl and add the croutons.
- I love eating this with Briannas Home Style Blush Wine Vinaigrette.
