Momma's Diet Fruit Coffeecake
- 1 cup frozen mixed berries or whatever frozen fruit you prefer!
- 1/4 cup white sugar
- 1 egg
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/4 cup marg or butter
- 1/4 cup sugar
- 1 tsp vanilla
- 1/4 cup milk
- pour sugar over fruit in a bowl, mix and leave to masserate at room temperature, for at least 4 hours!

- Once berries have masserated, cream butter with 1/4 c sugar til well miexd, then add in egg and beat well.Add in vanilla.
- Miix baking powder and flour together well, then add to egg mixture along with milk.
- Batter should be slightly thicker than cake batter.Pour batter into sprayed 8x8 cake pan and spread to even out.
- Sprinkle fruit with juice over top of batter keeping more to the center.
- Add all of juice that has formed in bowl!

- Bake in 350*F oven for 20-25 minutes or required length of time for cake to be golden and dry on top.
- Serve with ice cream, whipped cream, or plain, all are good.
