Princessleah's adapted from Princess Cruises' Fettuccine Alfredo
- 1 lb egg noodles- fettuccine
- 4 egg yolks
- 1 stick butter
- 1 cup heavy cream
- 1 cup Parmesan cheese
- 1 cup romano cheese
- 3 clove garlic
- 1 tsp nutmeg
- 1 Salt and Pepper to taste
- 1 cooking sherry to taste
- Cook noodles according to package instructions
- Drain and set aside.
- Boil 3/4 c. cream and the butter and remove from heat.
- Combine egg yolks with remaining 1/4 c. cream to form a liaison.Add 1/4 c. of the boiled cream to the liaison.
- Stir and then combine liaison with the rest of the cream.
- Add Parmesan and Romano cheeses.
- use a garlic press to crush the garlic into the sauce
- Add nutmeg and sherry.
- Adjust seasoning.If necessary, reheat pasta in boiling, salted water.
- Toss drained pasta with sauce.
