Sam's Spaghetti Alla Carbonara

  1. Cut pancetta into cubes.
  2. Drop spaghetti into 4-5 quarts of salted, boiling water and cook until al dente.
  3. Drain and set aside.
  4. Put oil, butter, and garlic into a small saute pan.
  5. Cook until garlic is a deep golden color.
  6. Remove garlic and discard.
  7. Add meat to pan and fry at medium high until the ham is slightly crisp at the edges.
  8. Add wine to meat and cook until completely boiled away, then turn off the heat.
  9. In large bowl, break open eggs and beat slightly.
  10. Add cheeses, pepper and parsley and mix well.
  11. Add spaghetti to the egg mixture and toss until well coated.
  12. Add meat mixture, toss and serve.
