Deep Fried Chicken - Authentic Recipe from a Chinese Restaurant
- 350 grams Chicken thigh meat
- 25 ml Cooking sake
- 20 ml Soy sauce
- 2 tsp Umami seasoning
- 1 tbsp Light brown sugar (or granulated sugar)
- 13 grams Raw ginger juice (grated with skin)
- 5 ml Oyster sauce
- 1 Katakuriko
- Combine all the seasoning ingredients except for the katakuriko with the chicken.
- Rub the seasoning into the meat.
- Mix in the katakuriko and while waiting for the ingredients to blend, chop the cabbage and other garnishing vegetables.
- Deep fry for about 5 minutes in oil heated to 170C, then remove and let sit for 2 minutes.
- Briefly deep fry once more in oil heated to 200C, then serve.
