Shrimp and Veggie Pasta

  1. In a large saute pan, add oil and mushrooms, and cook for 3 minutes.
  2. Add green onions, salt and pepper, and cook for another minute.
  3. Add the shrimp, saute for three minutes.
  4. Add the garlic, spinach, and tomatoes, saute for three minutes.
  5. Mix the pre-cooked pasta with the shrimp and vegetables.
  6. Add the basil and 1/2 of the parmesan cheese.
  7. Serve garnished with parsley and leftover parmesan cheese.
