Crispy Roasted Chicken
- 3 large Bone-In, Skin-On Chicken Breast
- 1/4 cup Salt
- 3 tbsp Sambal Oelek
- 1 tbsp Garlic Powder
- 3 tbsp Paprika
- 1 tsp Ground Black Pepper
- 4 cup Water
- 2 tbsp Olive Oil
- 1 1/2 tsp Salt
- 1/2 tsp Ground Black Pepper
- In a medium mixing bowl, combine thoroughly the salt, Sambal, garlic powder, paprika, black pepper, and water.
- Using a small knife, poke 5-7 holes in each chicken breast.
- In a large mixing bowl, place chicken breasts skin side down.
- Pour marinade mixture over the top and let marinate in the refrigerator for 8-12 hours.
- Preheat oven to 400F.
- Place a baking rack on a sheet pan and place chicken breasts on the rack skin side up.
- Coat the tops with olive oil, salt, and black pepper.
- Bake at 400F for 60 minutes or until the juices run clear.
