Blueberry Muffins
- 3 cups all-purpose flour
- 1-1/2 tbsp. baking powder
- 1/2 tsp. baking soda
- 1-1/4 cup granulated sugar
- 1 cup unsalted butter
- 1-1/4 cup milk
- 2 eggs, lightly beaten
- 2 cups fresh
- frozen blueberries
- Preheat oven to 400F.
- Grease 12 3x1-1/2-inch muffin cups.
- In a large bowl, stir together flour, baking powder, baking soda, sugar and salt.
- In a medium size saucepan, melt the butter.
- Add milk and lightly beaten eggs.
- Add butter mixture to dry ingredients and mix throughly just until moistened.
- Fold in blueberries.
- Spoon the mixture evenly into prepared muffin cups.
- Bake 25-30 minutes or until toothpick inserted into the center of the muffin comes out clean.
