Chicken Breast with Wasabi Mayonnaise

  1. Cut the chicken diagonally.
  2. Add the sake, season with salt and pepper.
  3. Don't worry if the sake overflows from the measuring spoon.
  4. You can use a generous amount of sake!
  5. Lightly coat the chicken with 1 heaping tablespoon of katakuriko.
  6. Pour the oil in a frying pan and fry both sides until brown.
  7. Combine the dashi soy sauce, wasabi and mayonnaise to make a sauce.
  8. When the chicken is cooked through, coat with the sauce while chicken is still hot.
  9. Serve it on a plate.
  10. It looks pretty if you garnish with a shiso leaf, but it's not necessary.
  11. Enjoy while it's warm.
