Classic sponge cake with a cinnamon twist
- 75 grams butter or margarine
- 2 eggs
- 200 ml caster/granulated/refined sugar
- 1 tbsp vanilla extract
- 2 1/2 tsp ground cinnamon
- 300 ml regular flour
- 2 tsp baking powder
- 100 ml milk
- 1 melted butter for the pan
- 1 flour or fine breadcrumbs for the pan
- Melt the butter or margarine and let it cool.
- Whisk together the eggs and the sugar until it is white and super airy.
- Add the flour, baking powder, vanilla extract and cinnamon.
- Add the milk and the butter, and whisk together.
- Pour the batter into a pan or baking form that you have brushed with melted butter and then coated in flour or fine breadcrumbs for baking.
- Bake in the oven at 175F celsius/350F for 25-35 minutes.
- A knife or a skewer inserted in the middle of the cake should come out completely dry.
