Classic sponge cake with a cinnamon twist

  1. Melt the butter or margarine and let it cool.
  2. Whisk together the eggs and the sugar until it is white and super airy.
  3. Add the flour, baking powder, vanilla extract and cinnamon.
  4. Add the milk and the butter, and whisk together.
  5. Pour the batter into a pan or baking form that you have brushed with melted butter and then coated in flour or fine breadcrumbs for baking.
  6. Bake in the oven at 175F celsius/350F for 25-35 minutes.
  7. A knife or a skewer inserted in the middle of the cake should come out completely dry.
