Tropical Chicken Salad Croissants
- 1 whole Roasted Chicken, Diced (about 4 Cups)
- 2 Tablespoons Fresh Lemon Juice
- 1 cup To 1 1/2 Cups Mayonnaise Or Creamy Style Salad Dressing (such As Miracle Whip)
- 1 teaspoon Salt
- 1/2 whole Purple Onion, Finely Chopped
- 1 can (20 Oz. Size) Pineapple Tidbits
- 1 cup Halved Green Grapes
- 1 cup Slivered Almonds, Toasted
- 1 teaspoon To 2 Teaspoons Coconut Flavoring
- 1 Tablespoon Chopped Cilantro
- In a large bowl, toss the chicken with the lemon juice.
- Set aside in the fridge while preparing the remainder of the ingredients.
- Mix the salad dressing, salt, onion, pineapple, grapes, almonds, coconut flavoring, and cilantro into the chicken until evenly combined.
- Chill until serving.
- Makes 8 servings if served in large croissants.
- Makes 28 2-tablespoon servings for mini croissants.
