Tropical Chicken Salad Croissants

  1. In a large bowl, toss the chicken with the lemon juice.
  2. Set aside in the fridge while preparing the remainder of the ingredients.
  3. Mix the salad dressing, salt, onion, pineapple, grapes, almonds, coconut flavoring, and cilantro into the chicken until evenly combined.
  4. Chill until serving.
  5. Makes 8 servings if served in large croissants.
  6. Makes 28 2-tablespoon servings for mini croissants.
