Baked Fish Cutlets
- 4 ounces, weight Chinese Cabbage
- 1 Onion
- 1 bunch Dill
- 1 bunch Parsley
- 1 Carrot
- 2 slices White Bread
- 1 cup Water
- 2 pounds Minced Cod
- 1 Egg
- 1 cup All-purpose Flour
- 2 ounces, weight Butter
- Preheat the oven to 390 degrees F (200 degrees C).
- Shred the cabbage, onion, dill and parsley.
- Finely grate the carrot.
- Set aside.
- Put the bread slices and water in a small bowl and allow bread to soak for 1 minute.
- Then drain the water and squeeze the bread to remove excess water.
- In a large bowl mix the minced cod, shredded vegetables and greens, soaked bread and egg.
- Mix all the ingredients thoroughly and smash the mince against the bowl walls as you are stirring to break up clumps and make it smooth.
- Form the mixture into cutlets about 10 cm long and set them on a plate.
- Pour the flour onto a plate or cutting board.
- Roll the fish cutlets in the flour.
- Place them onto a greased roasting pan and send to the preheated oven to cook at 390 degrees F (200 degrees C) for 15 minutes.
- Meanwhile melt the butter in a small pot.
- After 15 minutes remove the cutlets from the oven.
- Drizzle the melted butter over the top of the cutlets.
- Put them back to the oven to cook for 15 minutes more.
