Summer Garden Vegetable Medley
- 1 onion, sliced
- 1 clove garlic, minced
- 2 c. young green beans, cut in thirds
- 1 c. fresh zucchini or yellow squash, cut in rounds
- 1 c. broccoli
- 2 carrots, cut in thin slices
- 1 green pepper, in thin strips
- 1/2 small head cabbage, chopped
- 2 small tomatoes, cut in wedges
- 4 Tbsp. margarine
- 3 Tbsp. water
- salt and pepper to taste
- 1/2 c. grated Parmesan cheese
- 1/2 c. crisp croutons
- Prepare all vegetables and drain.
- Place butter and vegetables in a large skillet.
- Add water, salt and pepper.
- Cover and steam cook 12 minutes, until just tender-crisp.
- Stir in cheese and croutons.
- Serve at once.
