Tilapia with Capers Recipe

  1. Salt & pepper then dust with flour both sides of tilapia.
  2. Melt 2 tablespoons butter and the olive oil in a pan on low.
  3. When the butter/oil mixture has melted, turn heat to medium high and add the tilapia when the butter/oil mixture is slightly brown.
  4. Cook first side approximately 3 minutes and the second side approximately 2 minutes.
  5. Add chicken broth to just under A 1/2 cup mark in measuring cup.
  6. Squeeze lemon to end up at A 1/2 cup of total liquid.
  7. Add capers.
  8. Remove fish from heat when done cooking and place in oven on low to keep warm.
  9. Turn heat to high and add the chicken broth mixture to butter/oil mixture.
  10. Scrape/deglaze the pan.
  11. Reduce about 3 minutes, then add 1 tablespoon of butter.
  12. Top the tilapia with the sauce and serve.
