Tilapia with Capers Recipe
- Salt & pepper
- Flour
- Two sides of tilapia
- 3 Tablespoons butter
- 1 Tablespoon olive oil
- A 1/2 cup chicken broth (just under)
- A 1/2 lemon
- Capers
- Salt & pepper then dust with flour both sides of tilapia.
- Melt 2 tablespoons butter and the olive oil in a pan on low.
- When the butter/oil mixture has melted, turn heat to medium high and add the tilapia when the butter/oil mixture is slightly brown.
- Cook first side approximately 3 minutes and the second side approximately 2 minutes.
- Add chicken broth to just under A 1/2 cup mark in measuring cup.
- Squeeze lemon to end up at A 1/2 cup of total liquid.
- Add capers.
- Remove fish from heat when done cooking and place in oven on low to keep warm.
- Turn heat to high and add the chicken broth mixture to butter/oil mixture.
- Scrape/deglaze the pan.
- Reduce about 3 minutes, then add 1 tablespoon of butter.
- Top the tilapia with the sauce and serve.
