Emeril's Bellini

  1. In saucepan, over medium heat, combine the peaches, sugar, and water.
  2. Bring the liquid to a boil.
  3. Reduce the heat to medium low and simmer for 5 minutes.
  4. Remove from the heat.
  5. In a blender, puree the mixture until smooth.
  6. Add a enough water to thin the puree out into a peach juice.
  7. Refrigerate until chilled.
  8. Fill each flute glass 2/3 of the way with Champagne.
  9. Add the peach juice and serve.
