White been and Tomato Soup With Orange and Mint
- 1 teaspoon olive oil
- 1 cup chopped onion
- 4 garlic, gloves crushed
- 2 cups vegetable broth
- 2 (16 ounce) cans tomatoes, chopped, undrained
- 1 (19 ounce) can white beans, rinsed and drained
- orange peel
- 1 teaspoon dried mint
- 12 teaspoon sugar
- salt
- pepper
- Heat oil in a large saucepan over medium heat.
- Add onion and garlic.
- Cook, stirring frequently, 3 minutes.
- Add remaining ingredients, except salt and pepper.
- Bring mixture to a boil, then reduce heat to medium-low, cover and simmer 45 minutes.
- Remove and discard orange peel before serving.
- Add salt and pepper to taste.
