Ashleys Banana Bread
- 3/4 cup (1 1/2 sticks) butter
- 1 1/2 cups sugar
- 2 large eggs
- 4 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup buttermilk, well shaken
- 1 cup chopped pecans
- Preheat the oven to 350F.
- Grease 2 9 x 5-inch loaf pans.
- With an electric mixer, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Beat in the bananas and vanilla.
- Sift the flour together with the baking soda and salt and add to the banana mixture alternately with the buttermilk, beginning and ending with flour.
- Fold in the nuts.
- Pour the batter into the loaf pans and bake for 55 minutes.
- Cool slightly in the pan before turning the loaves out onto wire racks to cool completely.
