Spring Vegetable Rice Salad
- 4 cups cooked rice
- 1 cup halved cherry tomatoes
- 1 cup cut-up asparagus spears (1 inch), cooked, cooled
- 3/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
- 1 Tbsp. GREY POUPON Dijon Mustard
- 1 Tbsp. chopped fresh parsley
- grated peel and juice of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- Toss rice with tomatoes and asparagus in large bowl.
- Mix remaining ingredients until well blended.
- Add to rice mixture; toss to coat.
- Serve immediately.
- Or, cover and refrigerate until ready to serve.
