Caprese Sandwich

  1. Brush both sides of bread with olive oil.
  2. Broil one side until lightly browned.
  3. On the toasted side, place fresh basil leaves, tomato slices, and fresh mozzarella slices.
  4. Sprinkle with salt and pepper.
  5. Broil until cheese begins to melt.
  6. Place second slice of bread on top, toasted side down.
  7. Broil sandwich until lightly browned on top.
  8. Flip over; broil until lightly browned on top and cheese is melted.
  9. To eat, dip in balsamic vinegar.
  10. (I often eat this open-faced.
  11. If you do, just toast both sides of the bread before broiling.)
