Oyako-don (Chicken and Egg Rice Bowl)

  1. Soak dried mushroom in water.
  2. Add soy sauce, mirin, sugar and salt.
  3. Cut chicken into bite-size pieces.
  4. Slice the onion.
  5. Put the soy sauce mixture in a pot or a skillet and bring to a boil on medium heat.
  6. Put the chicken and onion in a skillet and cover with a lid.
  7. Let simmer till cooked.
  8. Beat eggs in a bowl, and pour over the chicken and onion.
  9. Cook an additional 10 sec.
  10. Remove from heat and cover the skillet until egg is steamed.
  11. Ta-da!!!
  12. Serve over cooked rice in a bowl.
